Shelf Life Estimation of Snakehead Fish (Channaastriata) Protein Concentrate Dispersion Using ASLT Method by Arrhenius Approach

Shelf life estimaton of snakehead fish protein concentrate dispersion is very important before indtroducing the product to the market. Accelerated Shelf Life Testing (ASLT) methods with Arrhenius can be used for shelf life estimation. This method are very suitable for snakehead fish protein concentrate dispersion because it is suitable for the product which is sensitive to temperature changes. The aim of this research was to estimate the shelf life of snakehead fish protein concentrate dispersions, were stored in three temperatures 50C, 280C and 450C. It was evaluated which the parameters of total microbial, TBA (Thiobarbituric Acid), TVB (Total Volatile Base), and Organoleptic (flavor, taste and color). The result showed that the quality decrease of snakehead fish protein concentrate dispersion followed the reaction rate of the order 1, and TVB parameter has been chosen as a key parameter because it had the lowest value of Ea, which was 167,6 kal/mol. The shelf life of snakehead fish protein concentrate dispersion is determined by order 1 equation,t=2,85/(Exp(((-84,38)/(T+273))-2,1)). So, the shelf life of snakehead fish protein concentrate dispersion were 1,1 months at 50C and one month at 280C and 450C.
