Snakehead fish processing technology has been carried out further by making the concentrate dispersion of snakehead product as food supplements to fulfill the protein of human’s need. One improvement can be made on the concentrate dispersion of snakehead product is by upgrading its production processes as much as 1 liter. The purpose of this research were to determine whether the upgrading process of concentrate dispersion of snakehead production as much as 1 liter was the same process as the concentrate dispersion of snakehead fish production as much as 100 ml (laboratory scale), and the preparation of standard operating procedures in upgrading the production process of concentrate dispersion of snakehead fish that will be used later as a reference in the concentrate dispersion of snakehead production by pilot plant scale. There were three stages used in this researches as following : First, preparation of Standard Operating Procedure (SOP). The second, analyzing the physical concentrate dispersion of snakehead fish and thirdly, analyzing the chemical concentrate dispersion of snakehead fish after upgrading the production process. This research used a qualitative descriptive data analyzed in the preparation of SOP (Standard Operating Procedure), organoleptic test, and also descriptive quantitative of microbial testing and chemical analysis which calculate the concentrate dispersion of snakehead fish products. The result showed that upgrading the concentrate dispersion of snakehead fish production process could be done from a laboratory scale with the result of 100 ml (capacity of 10 gram of raw materials) to 1 liter (capacity of 1 kg raw material). This was carried out by upgrading the production process as well as the preparation of Standard Operating Procedures (SOP) on the upgrading process of snakehead fish concentrated which includes : crushing/refining, stirring, heating, packaging, and sterilization.
